Warm Brussel Sprout and Bacon Salad

I love living in B.C. where we get to experience different seasons. Summer is my favourite season but there’s something about the anticipation of Fall with cooler weather, cozy knits and comfort food.

I’ve been on the hunt for more recipes to try at home. Ones that are healthy and easy to make are my go-to. Last week I made this brussel sprout salad and it didn’t disappoint.

Warm Brussel Sprout and Bacon Salad

Ingredients

    5 slices bacon
    2 pounds brussels sprouts, trimmed and sliced thin
    1/2 cup walnuts, chopped
    1 cup fresh parmesan
    black pepper

Directions

In a large saute pan over medium-high heat, cook the bacon until crispy.
-Transfer slices to a paper towel lined plate.
-Reserve the bacon grease in the pan.
-Reduce heat to medium, and add the shredded brussel sprouts, tossing them in the grease. Add some black pepper.
-Cook until the begin to turn golden brown in areas, tossing occasionally.
-Chop the bacon, add it back to the brussel sprouts and toss together.
-Remove from the heat and transfer to a bowl.
-Top with walnuts and parmesan and serve.
