I hope you all had a fantastic week! It’s been quite hot and muggy the last couple of days here in the Fraser Valley, since we’ve been home. I can’t complain though because I love warm weather.
While we were in Ontario my sister-in-law made the most delicious, grapefruit avocado salad. Avocado is something that I could eat every day but I haven’t fallen as much for grapefruit. It’s not that I don’t like it, it’s more that I never think to buy it at the grocery store.
This is a perfect summer salad especially on those warm evenings when the last thing you want to do is turn on the oven.
Grapefruit Avocado Salad
Ingredients
- 2 avocados, peeled and sliced
- 1 grapefruit, peeled and segmented
- 1 shallot diced
For the dressing:
- 1 tablespoon champagne or white wine vinegar
- 2 tablespoons olive oil
- salt and pepper to taste
Directions
- Slice avocados.
- Segment grapefruit.
- Dice shallot.
- In a small bowl, combine ingredients for dressing and mix.
- Spoon dressing over salad.
