To get in the spirit of St. Patrick’s Day, I rounded up a couple of kid-friendly snack ideas. Not only are they kid (and adult) friendly but they are also healthy! I ended up making two snacks – a shamrock shake and fruit skewers.
A few weeks ago, Spencer saw an ad for a shamrock shake and wanted one. I considered it for about a minute and then decided not to get one. As a result, I was on the look out for a shamrock shake that didn’t have as much sugar and food coloring and happened to find one. I was excited to make this recipe and have Spencer and David try it out. There’s nothing like getting feedback from a kid AND an adult. Needless to say, they both enjoyed it.
Healthy Homemade Shamrock Shake
Ingredients
- 1 cup vanilla nonfat Greek yogurt
- 1 banana
- 2 handfuls baby spinach leaves
- 1 cup unsweetened vanilla almond milk
- 1 Tbsp agave nectar
- 1-2 drops peppermint extract
- 5-6 ice cubes
Directions
- Combine all the ingredients in a blender.
- Blend on high until smooth.
- Serve immediately.
NOTE: To make this vegan-friendly, substitute soy or coconut yogurt.
Healthy Fruit Skewers for St. Patrick's Day
Ingredients
- apples
- pear
- honeydew melon
- kiwi
- grapes
- wooden skewers
Directions
- Slice fruit to desired size and shape. (NOTE: Cut the melon in a rectangular shape)
- Slide the fruit onto the skewer and fill about 1/2 way (you don’t want it to be too top heavy)
NOTE: For an even tastier treat, you could dip the fruit kabob into vanilla greek yogurt.
