David and I were out with the kids this past weekend and stopped in at a restaurant that had the most amazing energy bites. They were so delicious, yet seemed so easy to make that David took it upon himself to find a recipe that he could recreate at home. He hit it out of the park and whipped these bites up in no time.
One thing that I love about this recipe is that it is definitely something I can prepare a large amount of in advance and keep in the freezer for a morning snack for Spencer or a late night snack for David and I. They also have just the right amount of sweetness to curb a sugar craving and do not take a long time to prepare.
4 Ingredient Peanut Butter Chocolate Energy Bites

Ingredients
- 1 3/4 cup of oats (old-fashioned or quick)
- 3/4 cup all-natural peanut butter
- 1/3 cup of honey (You might need a bit more to bind mixture together)
- 1/3 cup semi-sweet or dark chocolate chips (mini-sized are best)
- Optional Topping: 1/4 cup wheat bran, hemp seeds, flax or chia seeds
Directions
- In a medium bowl, stir together all of the ingredients.
- Refrigerate the dough for 2-3 hours if it is sticky or put it in the freezer for 30 minutes.
- Form dough into 24 tablespoon-sized balls and put in the fridge for about an hour before serving.
- To store, place in a ziplock bag or storage container, They can be refrigerated for up to 3 weeks or kept in the freezer for up to 6 months.
