This past summer we spent some time at my in-laws’ house. Whenever we go there, my mother-in-law serves us a lot of amazing food. This past summer was no exception. I’m not a big dessert person but one thing I can’t say no to is her pie. I’m pretty sure I was extremely full but had a second helping because I wasn’t sure when I would have another piece. It’s just THAT good.
About a week after returning home, I wanted a piece of pie. We picked up some peaches at a local market and I made in the pie in no time. To be honest, I cut corners by buying a pie crust. I didn’t feel bad about it because it still tasted amazing.
Ingredients
- dough for a 9-inch pie
- 5-7 peaches
- 1 cup whipping cream
- 2/3 cup sugar
- 4 tbsp flour
- Dash of salt
- 1/2 tsp cinnamon
Directions
- Roll our the pie dough and place it in a 9″ pie pan.
- Fill the pie dough with a single layer of peeled and halved peaches, facing up.
- Make the custard by stirring the rest of the ingredients together.
- Pour the mixture over the peaches.
- Bake the pie at 400 degrees for 35-45 minutes, until the pie is set.Tip: Cover the edges of the pie with tin foil so the crust doesn’t burn. Note: The prep time does not include making a pie crust.
