One drink that pairs well with warm weather is a pina colada. There’s something about the combination of pineapple and coconut that makes it feel like summer (or maybe it’s just a reminder of the days when we would lather ourselves in suntan oil that smelled like coconut)! We recently spent a week in the sun in Palm Springs and that was my (and Spencer’s) drink of choice while at the pool.
As the sun begins to show it’s face more and more in the upcoming months, I plan to try out some new, healthy popsicle recipes that we can have at the pool as a refreshing snack. I recently came across one recipe for a pina colada popsicle that I just had to try out.
I made it and it added a little liquid gold to our day.

PS – For the popsicles, I used zipzicle bags. They’re basically mini ziplock bags. I love them for little ones who may not finish their popsicles all at once as they can be put back in the freezer again.

Pina Colada Pops
Ingredients
- 1/2 cup coconut milk
- 1/2 pineapple (cut into chunks)
- 1/4 banana
Directions
- Blend all of the ingredients until smooth.
- Pour into popsicle containers and freeze.
Note: Each zipzicle holds 1/3 cup of liquid.
