I’m always on the lookout for something new to try for breakfast. Breakfast is definitely not my favourite meal of the day. I remember skipping it, at times, when growing up but I know how important it is so I make sure I do it.
Because it’s not a favourite mealtime of mine, I often can get stuck in a rut and can eat the same thing every morning. That’s why when I come across a breakfast recipe that catches my eye, I’m often up for trying it. Not many have made the cut but this one definitely has. I love that I can prep it ahead of time and have it ready to go in the fridge when needed (They can stay in the fridge up to four days). Recently, when I made this recipe, I made it in smaller portions so the kids could have one (or two) at breakfast.
High Protein Berry Yogurt Parfaits
Ingredients
- ½ cup uncooked quinoa
- 2¼ cups Greek yogurt
- 3 tablespoons maple syrup
- 2¼ cups berries (fresh or frozen)
- 3 tablespoons hemp seeds (I used chia)
Directions
- Cook quinoa according to package directions, and allow to cool completely.
- Assemble parfaits: yogurt, maple syrup, quinoa, berries then more yogurt.
- Sprinkle with hemp seeds.
- Seal and store in the fridge for up to 4 days.
