Healthier Brownies

I’ve always tried to have a balanced approach when it comes to eating. Having kids, I want them to eat healthy foods but to also be able to enjoy dessert every so often too.

We didn’t grow up eating brownies in our house but as a teacher, it is often the dessert of choice that kids bring to class parties. As a result, I have had many opportunities to try different brownie recipes.

I recently came across this brownie recipe that calls for black beans, no flour and no refined sugar. BONUS! I love being able to add vegetables into our food when possible.

These brownies are absolutely delicious. They are dense, full of chocolatey goodness and you cannot taste the black beans at all!

My food processor recently went out of commission, so I decided to use my Vitamix. I literally put all of the ingredients in there at once (excluding the chocolate chips). Instead of using stevia or sugar, I increased the maple syrup.

Once all of the ingredients are mixed together, you add the chocolate chips.

This recipe is so simple and does not take long at all to make.

 

Black Bean Brownies - No Flour Required

Ingredients

  • 1/2 cup black beans (15 oz. can drained and rinsed well)
  • 2 tbsp. cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup or agave (or honey)
  • pinch uncut stevia or 2 tbsp sugar (or omit and increase maple syrup to 1/2 cup)
  • 2 tsp pure vanilla extract
  • 1/2 tsp. baking powder
  • 1/2 cup to 2/3 cup chocolate chips

Directions

1. Preheat oven to 350 F.

2. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well.

3. Stir in the chips, then pour into a greased 8×8 pan.

4. Optional: sprinkle extra chocolate chips over the top.

5. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut.

NOTE: If they still look a bit undercooked, you can place them in the fridge overnight.
