This warm weather has me thinking of light, nutritious meals. If there is one meal that I struggle with, it’s breakfast. It’s my least favourite meal of the day. During the week, I often grab my breakfast and eat it while walking to the car or when I arrive at work. I definitely need to make it more of a priority.
On the weekend I made these coconut bowls for David and I and we both loved them. I had mine at lunch and the Greek yogurt made it filling. I know I’m not getting enough protein and this was an easy way to get it.
Kudos to David, who made my life easier when he Youtubed how to crack open a coconut and did it for me.
Dreamy Coconut Bowls
Ingredients
- Coconut
- Greek Yogurt
- Kiwi
- Strawberries
- Green Apples
- Pomegranate
- Fresh Mint
Directions
- Scoop yogurt into coconut halves (or a bowl)
- Add fruit toppings
- Top with fresh mint
Note: This would be great with some homemade granola, chia seeds, bananas, etc.
